Some definitions:

Person responsible for/of the Processing “Controller”: The natural or legal person, public authority, department or other body which, alone or jointly with others, determines the purposes and means of the Processing. (GDPR, Article 4 (7))

Sub-processor: The natural or legal person, public authority, department or other body that processes Personal Data on behalf of the Controller. (GDPR, Article 4 (8)).

Processing: Any operation, whether or not carried out by automatic means, which is applied to Personal Data, such as collection, recording, organization, structuring, storage, adaptation or alteration, retrieval, consultation, use, dissemination or otherwise making available, erasure or destruction.
